Plum Tomato Tartare
Peel the plum tomatoes, remove seeds and excess liquid, and dice them finely. Let drain for a few minutes. Mix with chopped spring onion, capers, and green chilies, seasoning with salt and pepper. Whisk egg yolk with mustard, Worcestershire sauce, hot sauce, and olive oil until creamy, then fold gently into the tomato mixture. Rest briefly and serve in a ring mold, topped with fresh herbs.

Pizza Looije
Roll out the pizza dough and cover it with grated or crushed plum tomato, well seasoned with salt, pepper, and a drizzle of olive oil. Spread a layer of grated cheese to taste, then top with strips of bacon and ham. Bake in a hot oven (around 220 °C / 430 °F) until the crust is golden and the cheese is bubbling. Once out of the oven, finish with fresh plum tomato slices and a few arugula leaves for freshness and contrast.

Hake cherryade
Place the hake fillets on a baking tray and drizzle with lemon juice. Sprinkle with salt and pepper to taste. Sauté some garlic until golden brown. Add the cherry tomatoes and cook until slightly softened. Pour the tomato and garlic mixture over the hake fillets and bake for 15 minutes. Sprinkle with chopped fresh basil to finish.

Looije’s Pasta
Cook pasta al dente and reserve one cup of cooking water. Put garlic with olive oil in a frying pan, add prawns and cook until pink. Add our cherry tomatoes (chopped) and cook for 2 minutes. Mix in the drained pasta, add cooking water if necessary. Stir in fresh basil leaves, adjust seasoning and serve with a sprinkling of Parmesan if desired.

Countryside cherry
Wash and dry the greens and place them in a large salad bowl together with the cherry tomatoes. Add some salted prawns and sliced cucumber. In a small jug, mix the olive oil, balsamic vinegar, honey, salt and pepper. Shake well to emulsify the vinaigrette. Drizzle the vinaigrette over the salad just before serving. Sprinkle with chopped toasted almonds.

Salmon and cherry
Preheat the oven to 200°C. Mix honey, soy sauce, garlic and ginger. Place salmon fillets on a platter, season and pour some of the mixture over the salmon. Place cherry tomatoes around the salmon. Bake for 12-15 minutes. Heat remaining honey-soy mixture until thickened. Serve salmon over tomatoes and pour sauce over salmon. Garnish with parsley - ready to enjoy!

Cherry jam
In a saucepan, combine the cherry tomatoes, sugar and lemon juice. Stir well and let stand for 30 minutes to allow the tomatoes to release their juices. Bring the mixture to medium heat and add a vanilla pill. Cook over low heat, until the tomatoes break down and the mixture is thick and glossy. Blend the jam with a hand blender.

Salted Looije rice
Cook onion and garlic in olive oil in a frying pan. Add rice, paprika, cumin, salt and pepper. Pour in some stock, cook until absorbed. Add cherry tomatoes, mix and simmer. Cover and rest. Serve garnished with parsley, ready to enjoy!
